THE STORY
One of the most distinctive flavors of Hatay’s breakfast culture, breakfast zahter is prepared from a balanced blend of roasted chickpeas, leblebi, menengiç, melon and watermelon seeds, fennel, coriander, wheat, cumin, sumac, sesame, pepper and salt. Its aroma is as layered and rich as its ingredients. Traditionally, zahter is placed in one bowl and olive oil in another; bread is dipped first into the olive oil and then into the zahter. This simple yet flavorful pairing is one of Hatay’s best-loved breakfast rituals.
